FALL HARVEST SALAD with FRESH HERBY MUSHROOMS

You're gonna want this salad and mushroom recipe at your next holiday gathering. With its festive look, this fall green salad is packed with all the fall flavors I love. Tender butter lettuce, apples, pomegranate arils, walnuts, and fresh fennel. Drizzled with homemade oil free dressing, delish! The mushrooms come together so fast yet with such a sophisticated blend of flavors thanks to the shallots and fresh herbs. These are both perfect Thanksgiving or festive sides to include at your next gathering or to even eat as a meal alone!


FALL HARVEST SALAD

✔ 15 Minutes ✔ Weight Loss Friendly ✔ Gluten Free ✔ Oil Free ✔ Serves 4


INGREDIENTS

Dressing:

1/4 cup apple cider vinegar

2 teaspoons yellow mustard

2 tablespoons maple syrup

2 tablespoons fresh squeezed orange or mandarin juice

1 tablespoon tahini

1 garlic clove, pressed

Salt and freshly cracked pepper to taste


Salad:

1/2 cup pomegranate arils

1 to 2 heads butter lettuce or desired greens

1/3 cup fennel bulb, thinly sliced

1 small apple, sliced

1 tablespoon raw walnuts


To make the dressing, combine all dressing ingredients in a small bowl and whisk together.

Cut and assemble the salad ingredients in a large bowl and pour dressing over when ready to serve.



FRESH HERBY MUSHROOMS

INGREDIENTS

1/4 cup vegetable broth

1 pound Baby Bella, Button, or Cremini mushrooms, sliced in half

2 shallots, thinly sliced

2 tablespoons fresh thyme leaves

1 tablespoon fresh sage, chopped

1/2 cup fresh basil leaves, roughly chopped

Salt and freshly cracked pepper to taste


1. In a medium frying pan over medium heat add in the 1/4 cup vegetable broth. Then add in the mushrooms cooking for 5 minutes, stirring occasionally. Reduce the heat to low, add in the shallots, thyme, sage, and half of the basil (about a 1/4 cup).


2. Cook stirring occasionally, adding more water as needed, until the shallots are cooked through, around 5 to 10 minutes. Season with salt and pepper and serve with the remainder of fresh basil on top.



NOTE: This is the perfect effortless dish to bring to a last minute gathering. It has a sophisticated taste, but is so easy to throw together.
