FRESH GREENS & “CHEESE” SANDWICH

A health conscious, yet still indulgent sandwich you can make fast! A vegan version of one of my favorite sandwiches from my childhood. Toasty, melty, and healthy. Yum 🤤



FRESH GREENS & “CHEESE” SANDWICH

✔ 15 Minutes  ✔ Weight Loss Friendly  ✔ Oil Free  ✔ Serves 1


INGREDIENTS

2 slices bread of choice, toasted

Staple Vinaigrette as a dipping option - get the recipe here


Filling, desired amounts:

Mustard greens

Romaine or green leaf lettuce

Sprouts of choice

Cucumber, sliced

Fresh herb of choice, dill, parsley, or basil pair well

Salt and pepper to taste


“Cheese”

1/2 cup raw cashews, soaked in hot water for 5 minutes then drained

1 and 1/4 cups water

1 tablespoon lemon juice

1 tablespoon apple cider vinegar

1/2 teaspoon salt

1 1/2 tablespoons nutritional yeast

1/4 cup tapioca flour/starch



1 Prep and chop your veggies.


2 Add all the cheese ingredients into a high speed blender and blend on high for 1 to 2 minutes until completely smooth. Pour the cheese mixture into a medium frying pan over medium heat. Begin to stir constantly with a spatula scraping the sides often. After a few minutes it will begin to clump up into a more glue like, stretchy consistency. Remove from heat as soon as this occurs.


3 Toast your bread, then slather some cheese on each piece and assemble your sandwich with your desired filling from above. Enjoy!




NOTE: You will have leftover cheese. You can spread this on quesadillas, a salad, on a pizza or anywhere you want some melty cheese. Another tip is to blend this up (don't heat it) and store it in a glass container with a lid, using only a ittle bit at a time on the stovetop for individual portions throughout the week. If you choose to do this, it will last in the fridge for 5 days.
