Irresistible Vegan Waffles with Chocolate Covered Strawberries serves 6



1/4 cup applesauce

1 and 3/4 plant milk of choice, I like a vanilla oat or soy milk for creaminess

2 cups flour, spelt, whole wheat pastry flour, oat flour, or buckwheat work well

2 tbsp raw sugar OR coconut sugar

1 tbsp baking powder

1/8 tsp salt

For serving:

• Desired amount of fresh strawberries

Desired amount of dark vegan chocolate, melted

Coconut Whipped Cream, optional, I used this recipe

1. In a large mixing bowl whisk all waffle ingredients until smooth. Pour by the 1/4 to 1/2 cup into your waffle maker (depending on your waffle maker size) and cook as directed by your waffle makers instructions.

2. Meanwhile, melt your desired amount of dark chocolate in the microwave for 30 seconds to 1 minute until fully melted. Dip desired amount of whole strawberries into melted chocolate, then place on a plate covered with parchment paper in the fridge for about 5 minutes to cool and harden.

3. Once your waffles are done, serve them with the chocolate covered strawberries, additional fresh berries, and Coconut Whipped Cream as desired.
