Cheesy Potato Broccoli Wrap

An unexpected twist on your typical wrap. Cheesy, a bit spicy, and very filling. The perfect way to enjoy a super high fiber meal.

Cheesy Potato Broccoli Wrap makes 4 wraps


1 large head of broccoli, cut into bite sized pieces


3 medium gold potatoes, peeled and cubed

1/4 tsp garlic powder

1/4 tsp smoked paprika

1/4 tsp red cilil flakes

1/4 tsp dried oregano

1 tbsp water

Salt and freshly cracked pepper to taste

Jalapeño Cheese Spread:

2 cups cooked great northern beans, drained and rinsed

1/4 cup jarred hot and sweet jalapeños

1 cup + 2 tbsp unsweetened plant milk of choice

2 tbsp flour of choice

1/2 cup nutritional yeast

1/2 tsp lemon juice

1/4 tsp garlic powder

1/4 tsp smoked paprika

1/4 tsp turmeric

1/4 tsp ground cumin

For Serving:

4 whole grain tortilla wraps

Mixed greens


Avocado, sliced

1. Preheat the oven to 400 F. Prepare a parchment paper line baking sheet.*

2. Prep the cubed potatoes in a medium mixing bowl along with the rest of the “potatoes” ingredients. Mix to combine and then bake on a parchment paper lined baking sheet for 25 to 30 minutes. In the meantime you can steam your broccoli and make the Jalapeño Cheese Spread.

3. Steam your broccoli for 3 to 5 minutes until slightly tender, or to your liking. Set aside.

4. In a high speed blender add all of the Jalapeño Cheese Spread ingredients and blend on high until smooth. You may need to use a tamper to help blend.

5. Once the potatoes are done, assemble your wrap by spreading 1 to 2 tbsp of the Jalapeño Cheese Spread onto the wrap, then add some potatoes, broccoli, a small handful of mixed greens, and salsa or avocado as desired. Wrap and eat, or wrap and warm by heating the assembled wrap in a pan (see video for technique).
