VEGAN RICE PAPER ROLLS WITH SWEET CHILI DIPPING SAUCE

These healthy rice paper rolls come together quickly and are my personal go-to when I know I need to eat a salad but don't want to eat a salad. Fresh, light, and free of overt fat. Use the veggies I've suggested or whatever veggies you have on hand to create this delightful meal!


VEGAN RICE PAPER ROLLS WITH SWEET CHILI DIPPING SAUCE

INGREDIENTS

Rice Paper Rolls:

• 6 rice paper wraps, my favorite brand is Double Happiness**

• 4 large romaine lettuce leaves

• 1 small red bell pepper, sliced into strips

• 1 green onion, chopped in half and sliced into strips

• 1/2 cup red cabbage, chopped

• 1/2 of a cucumber, cut into sticks

• 1 carrot, grated

• 1/2 of a fresh mango, sliced

• Fresh mint leaves, chopped or whole

• Fresh basil leaves, chopped


Quick Sweet Chili Dipping Sauce:

3 tablespoons maple syrup

1/8 cup lime juice

2 teaspoons chili garlic sauce

2 tablespoons mirin


1. Prep your veggies. Fill a large mixing bowl or dish with warm water. Place one rice paper wrap in the bowl of water and let it sit for about 30 seconds or until softened. Remove from water and lay flat on a lint free tea towel. Fill the wrap with your desired veggies then start rolling away from the edge closest to you, folding in the sides in like a burrito. Set aside. Repeat until you've made it through your desired amount of wraps.


2. Make the dipping sauce by combining all the dipping sauce ingredients in a small bowl. Whisk together. Serve immediately or store in the fridge.



NOTE: Some rice pepper wraps make life miserable. They rip, stick to everything, and just plain give you a headache. If you can find the brand I recommend, awesome, but if not, just keep experimenting with different wrap brands. It's not you...it's the wrap.
