FAST MASHED SWEET POTATOES WITH JALAPEÑO, GARLIC, AND GREEN ONION

Mashed sweet potatoes are such a holiday standard in the U.S. This fast version provides a little unexpected flavor twist on the classic staple.


FAST MASHED SWEET POTATOES WITH JALAPEÑO, GARLIC, AND GREEN ONION

✔ 30 minutes ✔ Weight Loss Friendly ✔ Serves 4


INGREDIENTS

2 pounds sweet potatoes, peeled and sliced a 1/4 inch thick

1/4 cup unsweetened soy or oat milk

1/2 tsp salt, optional

1/2 tsp garlic powder

1/4 of a jalapeño, stemmed, seeded, and minced

2 garlic cloves minced

1 green onion, sliced



1. Prep the veggies. Then steam* the sweet potatoes for 20 to 25 minutes until tender.


2. In a large mixing bowl transfer the hot steamed sweet potatoes*, the plant milk, salt, garlic powder, jalapeño and garlic. Mash with a potato masher until combined and smooth.


3. Transfer to the serving bowl and garnish with green onions to serve.


*NOTE: Steaming the potaotes helps retain more true flavor. It's important to mash the sweet potatoes hot as it will "cook" the jalapeño and garlic and reduce their bite somewhat.
