Fresh Green Bean Salad



Ingredients

• 10 oz. fresh green beans, ends trimmed

• 1 large tomato, chopped in to bite size pieces

• 3 tbsp rice vinegar

• 1 large garlic clove, minced

• 1 tbsp dijon mustard

• 2 green onions, chopped

• 5 large basil leaves, sliced into ribbons

• Salt and freshly cracked pepper to taste


1. Steam the green beans in a steam basket on the stove top for 5 minutes. Do not over cook.


2. While the green beans are steaming, make the dressing. In a small bowl, whisk together the rice vinegar, garlic, mustard, green onion, basil, and salt and pepper. Set aside.


3. In your desired serving bowl, add the green beans, tomato, and the dressing mixture. Toss gently until combined. Serve with other steamed veggies if desired.
