4 WEIGHT LOSS FRIENDLY SALAD DRESSINGS

Salads are an EXCELLENT weight loss tool to get in lots of volume for satiety, as well as multivitamin and multi-mineral rich plant foods. Here are 4 oil free, vegan, weight loss friendly twists on some classic salad dressings. All can be made ahead of time, doubled, or made on the spot. Minimal equipment required. All make enough dressing for a large salad.



#1 Miso Mustard - makes enough dressing for a large salad


INGREDIENTS

2 tbsp maple syrup

2 tsp mustard

1 tsp apple cider vinegar

Juice of 1 lemon

2 tsp miso paste

salt and pepper to taste

Shake or whisk in a small jar with lid. Stores well in the fridge for 5 to 7 days.



#2 Zesty Italian - makes enough dressing for a large salad


INGREDIENTS

1 tbsp Cashew Sour Cream, recipe below

1/4 cup aquafaba, canned chickpea water

1/4 cup white vinegar

1 tsp nutritional yeast

1 garlic clove, crushed

1 tsp mustard

1 tsp lemon juice

1/4 tsp dried basil

1/4 dried thyme

1/4 tsp dried oregano

1/4 tsp red chili flakes

Salt and pepper to taste

Shake or whisk in a small jar with lid. Stores well in the fridge for 5 to 7 days.



#3 Thousand Island - makes enough dressing for a large salad


INGREDIENTS

1 tbsp rice vinegar or red wine vinegar

1 tbsp ketchup

1 tbsp lemon juice

1 small dill pickle, about 2 tbsp, diced

1 tsp red onion, diced

1 tbsp Cashew Sour Cream, recipe below

Salt and pepper to taste

Shake or whisk in a small jar with lid. Stores well in the fridge for 5 to 7 days.



#4 Creamy Balsamic - makes enough dressing for a large salad


INGREDIENTS

1/4 cup balsamic vinegar

1 tbsp Cashew Sour Cream, recipe below

1 tsp mustard

1 tsp nutritional yeast

1 garlic clove, crushed

Salt and pepper to taste

Shake or whisk in a small jar with lid. Stores well in the fridge for 5 to 7 days.



Cashew Sour Cream makes 1 cup


INGREDIENTS

1 cup raw cashews, soaked and drained

3 to 4 tbsp lemon juice

1/2 cup water

Salt to taste


Blend all ingredients in a high speed blender for 2 to 4 minutes until creamy. Stores well in a glass container with lid for 3 to 5 days. I typically make this at the beginning of the week to have on hand enhance quick and easy dips and dressings.
