Sautéed Veggie Salad with Tzatziki Dressing

If you are subscribed to my YouTube Channel, you will know that I have recently started a series on "Easy Lazy Vegan Meals" I'm excited to share this simple, under 15 minutes to prepare Sautéed Veggie Salad with Tzatziki Dressing! Here's what you'll need:

Sautéed Veggies

2 cups mushroom of your choice

1 cup bell pepper, I used red and orange (sliced lengthwise)

4 cloves arlic (sliced)

2 Tbl fresh parsley (chopped)

1/2 tsp olive oil

salt and pepper to taste

Tzatziki Dressing

1 clove garlic (crushed)

2 Tbl fresh lemon juice

2 Tbl vegan sour cream, I like the brand "Tofutti"

1 Tbl dill weed (fresh or dried)

salt to taste

Fresh Greens

Feel free to put together what you like, but I chopped up romaine lettuce, butter lettuce, cherry tomatoes, dill pickles, red onion, and cucumber.


1. Chop up the veggies you will sautée, then set aside. Chop up your choice of fresh greens.

2. To make the Tzatziki dressing, in a medium bowl simply add the garlic, lemon juice, and vegan sour cream. Stir until it is smooth. Add dill and salt to taste. Set aside.

3. In a nonstick pan, add olive oil and heat over medium high heat for 1 minute. Add in mushrooms and bell pepper. Sautée for 1minute stirring, then cover for 3 - 5 minutes stirring occasionally. Add in garlic and continue to sautée stirring occasionally for 1 - 2 minutes. Add parsley, salt and pepper to taste; stir for about 1 minute, then turn off heat.

4. Assemble your fresh greens on a plate, and then add the sautéed veggies. Top with desired amount of Tzatziki dressing, as well as salt and pepper as desired. There you have it, a nutritious easy mix of raw and lightly cooked veggies with a flavorful dressing to boot! For a step by step video recipe watch the link below.
