How to make a Creamy Peppered Alfredo Pasta! Super simple and fast to make. Perfect for the weeknight rush.
9 oz Pasta of your choice
1/2 cup raw cashews (soaked and drained)
1/4 cup nutritional yeast
1/8 cup lemon juice
1 tsp whole black peppercorns
1/4 tsp chickpea miso paste
1/4 tsp salt
1/4 to a 1/2 cup of water (depending on your desired thickness)
desired amount of steamed broccoli florets
garnish with your desired amount of fresh basil, more nutritional yeast, salt and pepper
1. Soak the cashews for about an hour.
2. Begin cooking pasta according to package directions.
3. While the pasta is cooking, drain and rinse the cashews. Then it’s time to make the sauce.
Add cashews, nutritional yeast, lemon juice, peppercorns, miso paste, salt and 1/4 cup to 1/2 cup of water. Blend on high until smooth and creamy. I recommend a high speed blender like a Vitamix.
4. Steam the broccoli.
5. In a serving bowl combine the sauce and cooked pasta. Feel free to mix in the broccoli florets, or serve them on the side. Garnish with your desired amount of fresh basil, more nutritional yeast, salt and pepper.
Serve immediately and enjoy!
