Eli’s First Birthday is just around the corner (I can’t believe it!) and so I’ve been planning what I will serve at his party. I’ll have some more recipes coming soon from my party planning, but here is the first one. I present to you my vegan Smoked Almond “Cheese” Spread! This has always been a hit when I make it for parties. It’s really versatile and even if you aren’t having party anytime soon, it works great to add some nutty cheddar flavor to any freshly made bread, a sandwich, salad, or even fruit! Best of all it takes less than 5 minutes to prepare and make (not counting the soaking).
2 cups raw almond (soaked & drained for at least an hour)
8 oz. roasted red bell pepper strips in jar along with 1/2 of jars
packing liquid (equaling about 1/2 cup to 3/4 of a cup) I like using Mezzetta's brand
1 tsp garlic salt
1 tsp smoked paprika
1/4 cup nutritional yeast
After your almonds have been soaked and drained, add all ingredients to a food processor and process for 1-2 minutes, stopping to scrape down the sides if needed. Serve right away, or store in the fridge in a glass container with lid for up to one week.
