Today I want to share with you a light, citrus-y, tangy, and full of flavor salad! This is not a salad combo that I eat very often, but will definitely be adding it to my rotation. You can eat it alone for a great mix of fruit, vegetable, and healthy fat. You can add in a grain of your choice to make it heartier (think quinoa, cous cous, or barley). It also pairs well with a heavier main dish. So however you choose to eat it, enjoy!
1 small shallot (finely chopped)
1 tbl fresh squeezed lemon juice
1 tbl fresh squeezed lime juice
2 tsp maple syrup
1tsp dijon mustard
1 tbl olive oil
salt and pepper to taste
1 handful raw walnuts
1 head boston lettuce (torn)
3 large handfuls of arugula
1 green apple (thinly sliced)
In a jar with a lid, add the shallot, lemon juice, lime juice, maple syrup, dijon mustard, olive oil, salt and pepper. Close the lid and shake until combined.
In a large salad bowl add the lettuce, arugula, walnuts, and green apple. Pour the dressing over the salad and toss. With such a flavorful blend of ingredients, I can eat this whole salad on my own, but it can also serve 4 :)
